A Breakfast Dilemma


Friday morning we are having a breakfast potluck at work to say goodbye to a wonderful gal who is leaving.  Out of the seven people who will attend, there's one vegan, one vegetarian, one gluten free, and 2 dairy free-ers.

I cannot bring scones (butter, milk, gluten), muffins (milk, gluten), fresh bread (wheat), or even a vegetable frittata (cheese, milk).


I'm wondering if we will be sharing asparagus and carrots for breakfast.

Ideas, anyone?????

    1. OK, I have to admit that as awful as this recipe sounds, it looks pretty good! Thanks for sharing! I don't have any of those ingredients and of course I waited too long...but I see a new Saturday option on the horizon.

  2. I recently did this on a large scale. The only way I could do it was to vary the menu enough to make sure there was something for everyone--plain boiled eggs, plain bacon, fruit, oatmeal with a variety of condiments, a variety of baked things that some could eat and some could not, and a few other items. Maybe the staff should take the divide and conquer approach--someone do vegan, another gf, etc. And some lucky ones will be able to try a little of everything! Katie

    1. After tearing my hair out for days, I'm thinking your approach is what's needed. I can accommodate the gluten free but my dish will probably be something with eggs. Back to the frittata idea. Others are bringing lots of fruit.

  3. How about homemade rye bread? Then you could be sure that there is no wheat in it. YUM! Nothing better than rye toast with butter and apple butter on it for breakfast. Or maybe it's just me LOL
