Peanut Butter Oat Chocolate Chip Cookies

It was a another magic afternoon in the kitchen, taking a chance on a regular recipe and making it a lot healthier.  Oh, wonders!  The dough, I might add, was as good as the baked cookies - but I won't share exactly how much of it I enjoyed.  That's between me and the mixer.

Peanut Butter Oat Chocolate Chip Cookies
1/2 c. unsalted butter, mostly melted
3/4 c. packed brown sugar
Heaping 3/4 c. chunky peanut butter (natural, not hydrogenated, no added sugar)
1 large egg
1 tsp. vanilla
1 c. whole wheat flour
1 tsp. soda
1/2 tsp. sea salt
1 c. oats (organic, thick cut worked great)
1/2 c. semisweet chocolate chips

Mix well.  Using cookie scoop, place on parchment-lined cookie sheet.  Smash down slightly, as they hardly spread.  Bake @ 350° x 12-15 mins until set and slightly browned.  Makes ~2 doz.

  1. That's a very unusual recipe, with the natural p.b., and the whole wheat flour! They look delicious, and that tin is adorably pretty :) I may have to try this recipe; it looks healthier than the average :)
